Anonymizing a user is a requirement in the General Data Protection Regulation (GDPR) in the European Union. This means that when a user is anonymized, all data that would be able to identify who the user is, have been deleted. This doesn't delete the users questions or answers, but the personal data are deleted completely, like email address, name, address and so on.
